    I tried making the mild cheddar featured in your cookbook and it failed miserably. Not sure what I did wrong because I followed the recipe exactly as written. The cheese didn’t set. I put it in the freezer and it did firm up but when I took it out, it got liquidy again. Any suggestions?

     
  17. Janet Hi there. Thanks for that. You need to double the quantity of agar powder in the cheeses, the reason being that the revised recipes did not reach my publishers in time. The re-print of the book has thankfully changed this, so were’re fine now. Just pencil this into your book. You did nothing wrong at all, but be sure to really heat the mixture up until it’s almost boiling, heap the spoons up to the top having doubled the agar – and heating it whilst mixing all the time will help to release the gelatinious qualities of the agar and activate them in readiness for setting. A little tip would also be to use cling film instead of greasing the dish you pour the cheese into for setting. Allow it to cool properly before turning out. Remember, everybody’s hot plate, ingredients etc may slightly vary, so I think this will help for your next attempt, always adjust the density you wish to achieve by increasing the thickener until the desired consistency is reached, make a note of this, and from then onwards you will enjoy the same great result again and again and for years to come !     I want to try the mature cheddar recipe but is there a substitute that I could use for beer? We never have beer in the house.

     
  23. Hi Janet. If you buy beer for it, you can place the rest in an air tight jar and re-use it when you make more. It really does work and gives the ‘cheese’ it’s high end edge. Double the agar for both the cheddars and mozzarella. Hope this helps. πŸ™‚

I would say that our cheese is neither crumbly (just a little bit so) but it’s not particularly rubbery either, it’s a little firm, quite creamy and rich in taste – a full flavoured cheese. It hardens further when refrigerated as it dries up more, but you can keep it in an airtight tupperware. It can be sliced, spread (not like cream cheese, but it will break down on a surface which is not soft like fresh sliced bread, but it would do so on toast or crackers), it can be hand crumbled onto salads and also grated on the large grate size of your grater. The cheese is not identical in taste to cheddar, but tastes great and we have great reviews on our FB page for all our cheeses.
